Patrick Piuze (1973) werd in Québec in Canda geboren. Al vroeg raakt hij met het wijnvirus besmet. Na zijn middelbare school vertrekt hij naar het buitenland en werkt bij diverse wijnproducenten in Australië, Zuid-Afrika en Israël. Na terugkeer in Canada begint hij zijn eigen wijnbar “Le Pinot Noir”. Piuze’s grote droom blijft het echter om zelf wijn te maken en daarom vertrekt hij in 2000 naar de Bourgogne en gaat werken bij Olivier Leflaive in Puligny-Montrachet. Gelijktijdig volgt hij een opleiding aan het CFPPA in Beaune. Leflaive is onder de indruk van de kwaliteiten van Piuze en geeft hem de verantwoordelijkheid over zijn cuverie in Chablis. Vervolgens werkt hij enkele jaren voor Verget en tenslotte als keldermeester voor Jean-Marc Brocard. In 2008 besluit hij voor zichzelf te beginnen. In de loop van de afgelopen jaren heeft Piuze een enorme kennis verworven en een hechte relatie met diverse boeren opgebouwd. Hij weet enkele van deze boeren te overtuigen om een langdurige samenwerking met hem aan te gaan. Deze boeren leveren Piuze de druiven (Piuze is enkel geïnteresseerd in oude stokken op de beste terroirs). Hij adviseert bij de teelt en laat de stokken streng terugsnoeien. Als compensatie betaalt hij de boeren naar oppervlak, zodat ze geen belang hebben veel te produceren. Het oogsten verzorgt Piuze zelf en dit gebeurt volledig handmatig (een zeldzaamheid in de Chablis). De vinificatie en rijping is traditioneel (met gebruik van natuurlijke gisten) en rijping vindt (met uitzondering van de gewone Chablis) plaats op eerder gebruikte kleine houten vaatjes. De wijnen worden na zo’n 14 tot 16 maanden zonder filtering gebotteld. Het resultaat is indrukwekkend en gelijk al behoren de wijnen van Patrick Piuze tot de top in de Chablis.

Petit Chablis, Patrick Piuze 2011
John Gilman over de 2010: “As was the case with the 2009, the 2010 (en ook 2011) Petit Chablis hails from two different parcels of vines, with one of them lying immediately above Les Clos on the top of the grand crus. This wine is a blend of eighty percent barrel-fermented juice and twenty percent fermented in stainless steel tanks. The 2010 offers up a very pretty nose of grapefruit, apple, lovely, chalky soil tones and white flowers. On the palate the wine is medium-full, crisp and suave on the attack, with nice framing acids and good length and bounce on the juicy finish. A very good example. 2011-2017. Chablis "Terroir de Courges", Patrick Piuze 2011
The villages bottling called “Terroirs de Courges” hails from vineyards that lie out towards the village of Préhy and very close to Domaine Jean-Marc Brocard. These are all fifty-six year-old vines planted in south-facing slopes, and they have produced a very good bottling of Chablis AC in 2010. The wine offers up a deep and classy nose of apple, pink grapefruit, a touch of flint intermingled with the chalky soil tones and a smoky topnote. On the palate the wine is deep, full-bodied and fairly snappy, with good mid-palate depth, fine focus and impressive length and grip on the succulent finish. This will drink very well from the outset, but has a sufficiently tensile enough spine of acidity to carry it for most of this decade. 2012-2020.
