Patrick Piuze

Patrick Piuze (1973) werd in Québec in Canda geboren. Al vroeg raakt hij met het wijnvirus besmet. Na zijn middelbare school vertrekt hij naar het buitenland en werkt bij diverse wijnproducenten in Australië, Zuid-Afrika en Israël. Na terugkeer in Canada begint hij zijn eigen wijnbar “Le Pinot Noir”. Piuze’s grote droom blijft het echter om zelf wijn te maken en daarom vertrekt hij in 2000 naar de Bourgogne en gaat werken bij Olivier Leflaive in Puligny-Montrachet. Gelijktijdig volgt hij een opleiding aan het CFPPA in Beaune. Leflaive is onder de indruk van de kwaliteiten van Piuze en geeft hem de verantwoordelijkheid over zijn cuverie in Chablis. Vervolgens werkt hij enkele jaren voor Verget en tenslotte als keldermeester voor Jean-Marc Brocard. In 2008 besluit hij voor zichzelf te beginnen. In de loop van de afgelopen jaren heeft Piuze een enorme kennis verworven en een hechte relatie met diverse boeren opgebouwd. Hij weet enkele van deze boeren te overtuigen om een langdurige samenwerking met hem aan te gaan. Deze boeren leveren Piuze de druiven (Piuze is enkel geïnteresseerd in oude stokken op de beste terroirs). Hij adviseert bij de teelt en laat de stokken streng terugsnoeien. Als compensatie betaalt hij de boeren naar oppervlak, zodat ze geen belang hebben veel te produceren. Het oogsten verzorgt Piuze zelf en dit gebeurt volledig handmatig (een zeldzaamheid in de Chablis). De vinificatie en rijping is traditioneel (met gebruik van natuurlijke gisten) en rijping vindt (met uitzondering van de gewone Chablis) plaats op eerder gebruikte kleine houten vaatjes. De wijnen worden na zo’n 14 tot 16 maanden zonder filtering gebotteld. Het resultaat is indrukwekkend en gelijk al behoren de wijnen van Patrick Piuze tot de top in de Chablis.

  5. Chablis 'La Grande Vallée | Partick Piuze

    Burghound: ‘from Les Pargues which Patrick described as the "forgotten Premier Cru" since it was ascribed "Tête de Cuvée" by monks. In contrast to the expressiveness of most of the prior wines this is all but aromatically mute with only soft citrus hints discernible.     Vinous: ‘(there are just one 228-liter barrel and two 300s of this juice): Pineapple, lemon zest and crushed stone on the nose, along with the typical spicy character of the cru. Broad, moderately ripe and energetic but a bit less filled in than the Bougros and not singing today. The tangy lemon and orange flavors convey a subtle saline quality as well as a faint dry edge.   15. Chablis Grand Cru Preuses | Patrick Piuze

    Vinous: ‘(the yield here was just 35 hectoliters per hectare owing to millerandage): Aromas of yellow fruits, flowers and spices suggest a deep wine. Fat, savory and dry; a very concentrated wine with excellent breadth for the vintage. But the brisk flavors of pear, fresh white plum and Granny Smith apple will need time to fill in. It's hard to believe that this fruit was picked at 11.8% potential alcohol (and chaptalized only to 12.2%), but Piuze noted that he routinely gets mature skins here at low sugar levels.’ Lees verder

    The Wine Advocate: "The 2017 Chablis Grand Cru Les Clos was reserved and reductive when I tasted it—the least extroverted of all the wines in Piuze's cellar, as is often the case with Les Clos. Notes of lemon oil, crisp peach and iodine mingling with smoky, leesy nuances introduce a full-bodied, deep and promising wine that is less monolithic than the Valmur but no less powerful.
